Introduction to food safety requirements for cold and dry stores
If you store food products in a cold or dry store, there are food safety requirements you need to meet. These depend on the product, where it's going to be sold, and what you're doing with it.
What is a cold or dry store?
Cold (or cool) and dry stores are standalone operations that are used to store products for both human and animal consumption. The products they store may:
- be sold in New Zealand or exported overseas
- be either consumer-ready or need further processing.
Note: An operation where freezing, chilling, or storage is just one of the processing steps is not a standalone cold or dry store.
Cold and dry store food safety requirements
If you operate a cold or dry store, the food safety requirements you need to meet depend on:
- what products you store, and
- whether they'll be sold in New Zealand or exported overseas.
Storing products for sale in New Zealand
If you store food products that will be sold in New Zealand, the food safety requirements you need to meet depend on whether you store products for human or animal consumption.
Storing products for human consumption
If you store non-animal products for human consumption in New Zealand, you must comply with the Food Act 2014.
If you store animal products (including dairy products) for human consumption in New Zealand, you must comply with the:
- Food Act 2014, or
- Animal Products Act 1999, under a risk management programme (RMP)
Storing products for animal consumption
If you store products for animal consumption in New Zealand, different food safety requirements apply.
Storing animal products for export
If you store animal products that will be exported, the food safety requirements depend on what you're storing and which country it's being exported to.
Temporary storage of meat, game, or seafood
If you store meat, game, or seafood material temporarily before it's sent to a primary processor to be processed into human food, you need to meet different requirements:
